Suggestions for best way to improve - play tough opponents or easy?

Any thoughts on whether the best way to improve is to first master the easy tables and then move on to the more difficult tables and opponents? Or should I mix it up, or play against the best tables?

I was initially thinking that I should first master the easy tables, but maybe I would learn more by playing against better opponents, just by watching their moves.

In my opinion, neither (or both). Neither player set acts like humans anyway. The real use of both of them is to pretend they are humans, then look at your own stats to see if you are truly playing the way you think you are. That is, for sure, don't go adjusting to beat either player set. Your human opponents won't look like either of them.
